Truffled Baron Bigod ~ 1kg cheese
We have chosen Australian black winter truffles (Tuber Melanosporum) because the flavour profile is earthy, nutty, chocolatey and finishes with hints of vanilla. These truffles are prized by the greatest chefs in the world because of the intense, aromatic and earthy flavours.
Baron Bigod has a smooth, silky texture and a golden curd, with long lasting, farmyard and mushroomy flavours. The Australian winter truffle adds earthiness, hazelnut, chocolate and vanilla flavours. It is a truly exceptional pairing.
The cheese is cut through the middle and truffle is shaved onto one half, then re-sealed and left to age in our cheese fridge for one week.
