If the cuvee Nicolas Francois Billecart is the patriarch of the range – meet the matriarch. Named in honour of the other founder member of the house, Elisabeth Salmon. Made from equal parts Chardonnay and Pinot Noir, vinified as a white wine and then blended with some red Pinot Noir from vineyards around the house. The end result is a most beautiful and expressive wine. Copper pink in colour with exotic and candied fruits, wild strawberries and figs on the nose. The palate is so impressive, long and persistent with spicy red fruits and silky delicate bubbles.

Grand Cru Champagne at this price? Surely not... & it's cracking stuff as well. Paul Dethune is a very small Champagne house situated in Ambonnay in the Montagne de Reims area of the region. Ambonnay is also of course the home of Krug's very presigious Clos Ambonnay so we are in good company here. The style is rich with a lovely balance between ripe fruit & classy biscuit notes. This has all the gravitas of something far more expensive, so 'Viva the little man'.

A delicious Prosecco made using ancient techniques: fermented using indigenous yeasts and aged on its lees for 5 months, it is bottled unfiltered & non-clarified and undergoes secondary fermentation in the bottle for around 3 months until practically zero sugar remains. As there is no disgorgement, a yeast sediment is present. It is dry, appley, peachy & excellent but perhaps not what you would expect.

Please... for one second, take all thoughts of 'Lambrusco' circa 1978 out of your heads. This is Lambrusco as it should be. A lightly sparkling red wine intense with character. Combining leafy, strawberry flavours and dark sour cherries. Citrus peel - maybe orange campari notes with a light blossom hint skipping in amongst the mix.
